Order Joe's Kansas City Bar-B-Que

I was extremely skeptical about all the claims for "REAL SMOKED BBQ" as I searched "WHO SHIPS BBQ SMOKED IN A REAL PIT?"
I've tried almost every Commercial Catalogue "Meat house/ smokehouse" offerings in the U.S. and NONE were any good. Ribs doused with liquid smoke and processed in a high-speed robotic packing facility, then shipped SWIMMING in Sweet Katsup masquerading as BBQ Sauce for $50.00 doesn't cut it.
I used to have about the BEST Bar-B-Que ever smoked available locally. Events have eliminated that venue, and most local offerings are dry from sitting around, or "They just put more on, so come back in 3 hours" nonsense.
I saw that Joe's were the SAME ribs cooked and served there, and were NOT swimming in Catsup Sauce, so I ordered Ribs and pork. Here's my opinion:
1. These ribs are as close as you can get to FRESH smoked without a smoker in your back yard. After my first rack prepared per your Guide, I finished the final 15 minutes cook of my next rack on my Weber- they were less "OVEN MOIST" and more fresh BBQ. Outstanding dry rub- plenty of fresh smoked taste, PLENTY of meat, and provided TWO meals from the single rack. THAT has never happened before.
2. The pork flavor & texture is also wonderful. My Wife eats "Pulled Pork" in the shredded form, so Joe's chunks were refused. I plan on shredding the next pack before heating, in hopes she can enjoy these as much as I do.
3. My ONLY dislike is the included BBQ sauce- I would much prefer NOT to pay for it, or the extra shipping weight on any order. I am a sauce SNOB, and used to pay a famous Memphis BBQ Joint to pack and ship several sauces fresh blended, via overnight air, and mix them all together. This blend has every taste profile, and made the PERFECT vinegar/ mustard/ Katsup/ sweet & hot in every dip. Joe's tastes like the Kraft BBQ Sugar Catsup from the squeeze jar and I can't even use it blend.
