Joe's staff butcher makes our sausage from cuts taken from our amazing briskets and pork butts which are ground together with a proprietary blend of seasonings. We stuff and twist the links and smoke them over Missouri white oak in our own USDA sanctioned smokehouse and immediately package them for delivery.
